Fanesca Hoy

Quito, Ecuador

We tried this delicious soup in Quito's Mariscal's neighborhood (think Palo Alto). Ecuador's signature fish chowder, Fanesca is a special soup served during the weeks leading up to Easter Holy week (Semana Santa). From my bowl of overflowing goodness, I was able to pick out bacalao (salted cod) beans and grains. And to my delight, the soup was garnished with fried plantains, hard boiled eggs and a floating empanada.

It was so hearty, that I could not (and neither could the boy) finish the bowl. It was very very tasty :)
